    Almond Soup

    INGREDIENTS:
    1/2 lb of sweet almonds
    1 1/2 onion
    1/2 small head of celery
    1 quart of milk
    4 hard-boiled yolks of egg
    white roux (recipe follows)
    fried or toasted bread for serving
    1/2 pint of cream
    a little white pepper

     

    PREPARATION:

    1. Take half a pound of sweet almonds and blanch them by throwing them into boiling water till the outside skin can be rubbed off easily with the finger. Then immediately throw the white almonds into cold water, otherwise they will quickly lose their white color like potatoes that have been peeled.

    2. Next, slice up an onion and half a small head of celery, and let these simmer gently in a quart of milk.

    3. In the meantime pound the almonds with four hard-boiled yolks of egg, strain off the milk and add the pounded almonds and egg to the milk gradually, and let it boil over the fire.

    Add sufficient white roux till the soup becomes of the consistency of cream. Serve some fried or toasted bread with the soup. It is a great improvement to add half a pint of cream. The soup can be flavored with a little white pepper.

     

    WHITE ROUX

    White roux is used as a binder for white sauces.

    INGREDIENTS to thicken 1 liter liquid:
    - 60 g (1/4 cup) butter, clarified
    - 60 g (2 oz. or about 1/2 cup) flour

     

    PREPARATION:

    1. Melt the butter, in a heavy saucepan, until it begins to foam.

    2. Remove saucepan from heat, add the flour all at once. Return to the heat and keep stirring constantly with a wooden spoon until the mixture comes away from the bottom of the pan.

There also soup that are just plain fatting like French onion soup (Which has a lot of cheese) The best soup you can have for yourself is homemade soup it can taste the best and you can control the idgengents in the soup. The manufacturers can soup can have tons of salt and Trans fat and THAT is very bad for your health and to lose weight. Even if there reduce salt and Trans fat soups out there it is still too much. Eating soup at fast food places or restaurants can be very fatting and these use idengents to make the person hooked, so they can keep coming back for more.

    Once of the best soups out there is a Japanese miso soup. I tried it with I was coming down with a cold but my family want me to try this Japanese restaurants sent I was cold I decide to order miso soup. After having two bowels I started to feel better later and the next day. This work so much better than a can of chicken noodle soup that I grow up with. Curious I look up miso soup and the want I found. Miso soup has the benefits of regulate the hormone estrogens in women and it helps with looking young because of its rich with antioxidants and protective fatty acids, and a healthy dose of Vitamin E. It also boasts protein and Vitamin B12, and minerals to help increase the strength of your immune system. Miso soup also has the wakame seaweed is great to lower blood pressure and reduce cholesterol.Sounds good does it? Miso is also good for skin and helps one look young, so if you like to try it out if is sold at Asian stores. Whatever you get the packet or the miso paste is up to you but I prefer the miso paste. If you’re like me it will take a few tries to cooks it right.
